I wanted to make something with Hearts of Palm for Palm Sunday, but my thinking quickly turned to Artichoke Hearts and suddenly that’s all I wanted.
I cracked open one of my favorite books to get some background on artichokes (how to choose, how to prepare…etc). The index led me to the Jerusalem Artichoke, which is another name for Sunflower Choke and not an artichoke at all.
I had a magical moment of brilliance.
“Sunflower…..artichoke….um,yum!”

Spreadippity Sunflowery Artichoke
*It’s a dip..it’s a spread…it’s super-spreadippity, man!
This stuff is so good. I’m talking windows-to-the-walls delicious. Sunflower seeds and artichokes are a dynamic duo, like the Yin-Yang twins. (This concludes the crunk segment of this post.)
Plus, it’s so easy even a caterpillar can do it.
Get your goods out:
- 1 can of artichoke hearts (not marinated )
- 2 tbsp olive oil (I use extra light but any kind)
- 2 tbsp sunflower seed butter
- 2 cloves garlic
- 1/2 tsp Herbes de Provence (or oregano maybe)
Put ingredients in food processor and blend until smooth. The artichoke hearts can get stringy so make sure you blend it well.
Eat it with a spoon and swoon (like I did). But you can also use it on crackers, chips, and crudités (like I did.)
Radishes and Mary’s Gone Crackers.
All together now….
This stuff is prime material for experimentation so get your cow bell out. Spinach, nutritional yeast, maybe some tofu….the possibilities are prolific.
If you like artichoke dip….you will ADORE this. I promise. Try it.

LOL, I usually wait until mine makes them, too. And I don’t live at home. They seem real labor intensive and I am lazy (and cheap) but tits pretty easy, trust me.

I say that too! This recipe has my name in big fat capitals letters all over it. Like really, ALL over it. Only I don’t have artichokes right now. I did grow jeruselem artichokes in my garden last summer though. They are good. I always call them sunchokes which makes me giggle for some reason. Though not as much as you typing tits. That was AWESOME.

I just had my first artichoke heart yesterday in a delicious vegan gyro and it was SO good! I will need to try this recipe because now I know I love artichokes!

Missy, I love the recipes you post. Artichokes are delish. I enjoy mine picked fresh from the garden, stripped, trimmed, shaken, and then steamed.
It is amazing what a wonder is inside all of the outer aspects of this divinity. I learned that the leaves really are not too fun to try and eat, so when you do get an artichoke, make sure to take those leaves off to get to the edible part.

Yum! I’ve never cooked fresh artichokes, but this makes me want to try. I love veggie dips. My favorite is roasted eggplant with tahini and garlic – a version of baba ghanoush.

I bought a 4-pack of arthichokes so my family could enjoy them.
I ate two for lunch on Wednesaday.
And two for lunch on Friday.
None for you! All for me!
(I chop the stem off right at the bottom of the artichoke, then put the choke stem up on a steaming rack in a pot of boiling water. Cover and steam for 30-ish minutes. Maybe 45. Depends on the size of your choke. And other things. It’s done when a fork slides into the stem easily.)
I dip mine in butter but keep meaning to find something better. I think it’s this month’s Real Simple that has some recipes for things to dip the leaves in, other than butter.
