Here are some things I’ve ate, thinks I’ve thunk, happenings that happened and random details about me.
I had this miso soup on a particularly stressful day. Miso really is a wonder food and soup in a cup warms the soul.
Miso Soup with Brussels and Scallions
“I like to eat, eat, eat…apples and bananas.” Ever sing that song as a kid?
Warmed, sweetened apples and bananas with cinnamon and plain yogurt.
After I ate this I thought, “I need more banana in my life.”
Then I giggled cause, that’s what she said.
Steamed Brussels and Radish topped with my signature Scallion Hummus
(cause it leaves a signature on my breath).
I am really trying to mix up my diet but some things haven’t changed.
Cod Fillet, Asparagus, Zucchini, Onion and Thyme. Again.
Egg Whites and Mustard Greens, packed up for work. Again.
Egg Whites and Spinach for brekkie at home. Again.
Kale, Radish, Gomasio and Aminos.
Gomasio is sesame seeds and sea salt, Liquid Aminos taste like a mapley soy sauce. Both are HUGE nutrition boosts.
I cut into my Persimmon only to realize that I accidently picked up a Hachiya rather than a Fuyu. FYI – you have to wait until a Hachiya is superdy-duper squish squash ripe or you’ll gag and have pucker face. You can eat Fuyu straight up (and you should.) This went in the trash after I captured its beautiful butterfly likeness.
You know what else is bitter? Mustard greens…unless you cook them just right.
Mustard Greens sautéed in vegetable broth with scallions and nooch, natch.
(nooch, natch. nooch, natch. Cheap thrills.)
I have NO idea how to get a perfect nut-butter drizzle. I’m not bitter, though. Not with this consolation prize.
Anjou Pear and crunchy almond butter glop-izzle.
Who needs a drizzle when you can glop-izzle?

I’m reading the book, The Help. Can you tell? I love authors who can capture dialect or invent their own (Burgess’s Clockwork Orange, Roald Dahl).

I just recently finished The Help and LOVED it! I also enjoyed the dialects, which usually bugs me quite a bit. But Stockett did it masterfully!
Can’t put it down!
I eat so many bananas! It’s bananas.
But seriously, love them. Definitely depends on the consistency of the nut butter to get a good drizzle going – not the easiest thing to do! And now I’m craving an apple & PB. Yum!
I’ve embracd the glop-izzle. But sometimes I read other blogs and I’m like “How the…huh?” Gabriela at Une Vie Saine for example.
I read The Help over the summer… LOVED it!

I think you’ve really convinced me to try the apples with cinnamon and yogurt this time! It looks SO yummy! I love warm food too…probably because I’m always faaareeezing! lol.
Your meals look gorgeous and tasty, but I do want to point out that I don’t see a lot of protein or fat in there. I know fat is probably really scary, it is for me too. But I just worry that you’re not providing your body with all it needs to be healthy and keep you energized. Veggies are YUMMY, but we do need an equal amount of the other stuff too, ya know?
Is it okay for me to point something out like that? I’ve gotten the feeling that you appreciate getting feedback. If I’m out of place, please let me know!

P.S. Do you buy the egg whites that you pictured? If yes, which kinds do you buy? I’ve seen a ton of different ones in the store and I’ve been interested in them. I don’t want to just make an egg white from a normal egg because I know I’d end up wasting tons of yokes, lol.
Hi Sarah! Thanks for the note on the protein…I’ll give it ome thought. But REALLY this is by no means an accurate representation of what I eat. (Bowls of quinoa, and bowls<–yes…bowls…of hummus!!!) And more stuff, too.
For fat I rely on the hummus and nut butters a bit too much. Time to bust out the guacamole!!

PS – I buy the carton egg whites…I have no favorite brand. I get them at Sam's Club when I can. I also use egg beaters occasionally. I use an electric omelette maker, or a microave egg poacher most of the time. Super easy. You can also add them in your oatmeal (I have read…google it).
Oh — and my veggie burger? Hilarious– I cook them in the toaster oven and the oven most of the time. So easy (I'm lazy). So no need to feel presure to bust out the pots and pans…that' how I felt when I first started eating more.
I love that song! great, now its stuck in my head! I’ll be singing it with my niece all day now. hehe.
I’ve never picked up a bad persimmon but I have grabbed a prickly pear and thought it would taste like pear….hahahahahaha! WRONG!

It’s such a good teaching tool for vowels! I like to ite, ite, ite, Ipples and Baninis….I like to oat oat oat opples and banonos.

I think I read The Help in about 2 days flat. It was an awesome read – I love books that I can’t put down!
I can’t get the perfect drizzle either. I’m not a professional.
I think it may have to do with microwaving it and then using a piping bag…hahahaha..would be nice but you and I both know we won’t be going with a piping bag anytime soon. Being that I lick the spoon and add an extra bite all the time…I would hate to see that all go to waste!
Your thoughts about persimmons brought me back to my childhood in California! My family had friends that owned a persimmon “plantation”…We’d go persimmon picking (the ooey gooey Hachiyas!), and leave with messy, sticky faces! Such great memories.
I don’t drizzle my nut butters, I DIP! I think dunking makes meal/snack time more fun.
I usually do the dunk, too…but those perfect drizzles I see look so pretty!!

Are you counting calories at the moment?
I am. Otherwise I won’t eat enough to gain, actually end up loosing. I try to eat 1800 cal a day. This usually makes me gain.
Do you have a goal weight?
I do. Set by my doc and I. 106 pounds (for 5’5′). Today I weigh 99 and my goal still freaks me out a bit. But as I get “bigger” I somehow amaze myself the first by not caring about it so much – most of the time. Of course there are days when I feel like “a big fat cow”. But that is ED yelling in my ear. I’m finding more and more arguments to shut the voice up.
You can get better dear. Imagine all the creativity that can really get loose when you’ll have all your stamina. You should develop your writing even more. You have a real talent with words. Pour out the energy that now goes into AN to your writing. That will be something lasting. It will give you your identity and let the world know who you are.
My art has done that to me. In the summer I decided to get better and to find myself through my art. When ED tells me I am nothing if not uber skinny, I point to my blog and art and say “and what is that?”

Your questions are very thought provoking. Actually all these questions have been. I think I may need to take a second look at how I am going about this recovery thing.
I am not counting calories, though I am calorically-aware because of years of my ED. I feel like counting calories inspires me to restrict and that if I just eat sanely I will get to where I need to be. Yet…maybe I need to re-think that.
I don’t have a goal weight – when I saw a nutri it was never discussed and no DR has ever given me one.
I should probably get one.
Scrath that. I need one. I don’t have the sanity to make my own right now. I felt like I was “weight restored” or something (I’ve gained recently) and I weighed myself yeeterday as part of a reality check and was shocked to see a number look so disappointingly low.
