Here are some things I’ve ate, thinks I’ve thunk, happenings that happened and random details about me.

For starters.
I’m a protein kind of gal. When I wake up in the morning oatmeal is not in the cards.
I’m all about egg whites and egg beaters. And Greens!
I LOVE heaping amounts dark greenies in my brekkie. Makes me feel amazing.
Like a million (green) bucks.
Sometimes in Liquid Form.
And consumed on the road.
I most often eat breakfast at work, though. Attractive, huh?
Usually, I add something or other depending on what my body needs. Super hungry? I add in veggie meat. Sometimes I need more complex carbs so I may add hummus or crackers or wraps. Mostly I add a piece of fruit.
Like an apple.
And when my body needs fat I add cream cheese
or nut butter.
I made that nut butter my self! *beaming with pride*
Lunch is also consumed at the office and very easy to assemble. Microwave, toaster oven & I’m good to go.
My dinners, sadly, need a bit more work.
I am stuck trapped in a rut. My dinners are prepared in minutes, though, and they taste good to me!
And repeat.
I do up a ton of veggies and always go back for more…but I start with what fits on a plate (0:
And I love me my random snacks.
These nuts are…dangerously good. Recipe here. They also make for some nice nut butter if you have a food processor and are up for a challenge.
Need I say more? Cheezy. Popcorn.
Phantasmic.
I use an air popper that you put in the microwave.
Much quieter than a machine.
Vocabulary Lesson
Hummus = Hummus
Yummus = Hummus made with beans other than garbanzos
Humpalsa = Half the chick peas, mostly veggies.
Comes out like a mix between hummus, pesto, and salsa.
Pestalsa = No chickpeas or beans. Like a mix between pesto and salsa.
In the future I intend to fill the “in-between” photos with more deets and thinks.
Meanwhile…I’ll be looking for more of this:
- Do you photograph your food? Why? (cause asking why not would be too weird…lol)
- Have you found a food that really FUELS you? Like me and my greens and eggs?

I will mention again that I took those photos over weeks and weeks. Just random bits. I will not ever photo everything I eat in a day or even a full meal — but you are right. I need to obviously eat more.
Thats why I say I eat healthy food, but I am not a healthy eater (yet).

I’m working on adding more complex carbs, like the oats and rice and quinoa. But I am a HUMM-A-HOLIC right now. I eat about two cans of chick-peas a day. Seriously.

pecan butter stuffed pear- totally a christmas treat!! i love the evolution of your foods and meals. i think thats great that ur diving in and trying out new foods and even getting more experience with the food groups. in time it will feel so much easier and less of a mind chore if that makes sense. every step is a great one- it helps you move from steps to leaps! <3
btw. yes i know its been WAYYY too long for the test results. i actually forgot about the post!! this morning i was going through old photos and i saw the arm/blood test/bandage pics and definitely posted it asap.

I already see a difference — though I never cature an entire meal…my breakfasts for example are growing and I look back on old stuff and recall…that’s all I had?

I do a lot of the time. It really makes more conscious of what I’m eating. I also love sharing my ideas and stealing others so it’s only fair hehe.
Your breakfast looks delicious and makes me want to try things other than pancakes ha.

Glad you realize you are not quite yet a healthy eater, but you definitely eat lots and lots of healthy foods! I am going to have to try your “humpalsa” as I am also addicted to chickpeas!
Yes, I sadly don’t think until I am completely ed free and at a healthy weight I can say I am a healthy eater…obvs. But I eat healthy food.
The variations of hummus come in handy when you eat it like I do….I eat like a bucket a day with a spoon! You run out of chickpeas and beano after a while. I got creative.

People need to chill out about telling you what to eat, holy cow. This is your blog, and your body! You are a work in progress and have your own meal plan. Everyone eats differently and adds new foods in slowly!
I love seeing all of your pictures and I can’t believe those eggs are microwaved, that is so COOL! Guess what else?! I have those plates at my house! The ones with the gold squiggly’s on the side haha, love em!

Wow, you eat a lot similar to me(: haha I loved the salads at the end. What kind of lettuce do you like? I really like the crisp & crunchy kind vs the flimsy stuff.
I usually photograph my food if I’m really excited about a new thing I tried but not all the time.
Hmm.. Usually stuff like Naked juice smoothies, Amy’s wraps, really healthy stuff with black beans. (:
I have been eating dark leafy greens like Kale, Collards, Turnip greens….but when I do salad I love butter lettuces…the soft stuff, actually.
And I know it isnt that great for you but I love iceberg.

I’m not much of an egg girl but I have to say your eggs and greens look soooo yummy! You may just have tempted me to change up breakfast : o.
I admire your homemade nut butter!! I’ve been looking for pecan butter for a long time and haven’t been able to find it, perhaps I’ll just have to channel my inner Missy and whip it up myself : ).

You can do the nut butter! Its easy…just remember to keep on keeping on with the food processor. Takes a while.

I find that proteins make me feel good. The was a time I had almost none. Now turkey, ham and chicken cold cuts belong to my daily must haves.
Sometimes a bit of something sweet does me good too. A piece of candy. A tiny bite of dark chocolate.
Some of us are just protein oriented I think!
I don’t do the meat thing (except for fish and twice a year) but I hear ya!
Oh man. Do I EVER understand the dinner rut. And the lunch rut. And the breakfast run.
As for foods that fuel me? Every race I’ve ever run has started out with the exact same breakfast. Slice of toast, nut butter, banana. It is like heaven and keeps me well-fueled for short races and for a good segment of long races.
(It also incorporates three of my biggest fear foods, so it’s nice to give myself permission to eat it and FEEL GOOD about it.)

Who, in fact, challenged me to eat a banana this week. Just a banana. With no ritual. And no special combinations. And I stared at her like she had three heads and grasped my chest to keep the anxiety from exploding out of my chest.
EDs have such weird rules. Bread + nut butter + banana = safe. Banana = HORRIBLY TERRIFYING!
Hmmmm, see, I haven’t quite jumped on the food photography bandwagon. Been thinking about it a lot, and I think that when I actually make my own food (still in parents are foodie police stages) and eat it, I will photograph it. Then, I’ve just got to post it, daunting task numero dos.
It’s good to see you make the differentiation between ‘healthy eating’ and ‘eating healthily’ Lots of people tell me that I eat ‘so healthy’ and it makes me want to scream.
I like seeing the food you eat, I know that at some point I will get the courage to try it!
